Spiced Chicken Skewers


Chicken skewers with spices! Perfect for this weekend! You do not have to break your diet to enjoy perfectly grilled!

Ingredients:

1 C. bulgur
1 lb. boneless skinless chicken
2 tsp. chilli powder
2 tsp. extra virgin olive oil
2 pt. Cherry tomatoes
2 lemons
1 clove garlic
1 C. chopped parsley leaves

Directions:

Prepare grill for outdoor grilling, preheat large direct air or grill pan over medium-high heat.
In a large microwave-safe bowl, combine bulgur and 1 3/4 cups water. Microwave on high 10 minutes or until bulgur is tender and water is absorbed, stirring once.
In a medium bowl, mix the chicken with chili powder, 1 teaspoon oil and 1/4 teaspoon salt and freshly ground black pepper until well coated. Thread chicken and tomatoes alternately on skewers, spacing 1/4 inch apart.

Place the chicken skewers on hot grill rack and grill or 7 to 8 minutes until chicken loses its pink just everywhere, stirring occasionally.

Meanwhile, in the bowl with bulgur, 1 lemon, finely grated 1 teaspoon peel and squeeze juice 3 tablespoons. Add the chopped garlic, parsley, 1/4 teaspoon salt and freshly ground black pepper, and remaining teaspoon of oil. Stir well.

Divide the bulgur mixture and chicken skewers among serving plates. Serve with the remaining lemon, cut into pieces.
